Lentil Soup

Ingredients:

Lentils

Purple onions

Garlic cloves

Mushrooms

Bell peppers (green, orange, yellow and red)

Herbs (basil, oregano, parsley, rosemary, thyme)

Spices (black pepper, coriander, garlic granules, onion granules, turmeric)

Pecans (or walnuts)

Hemp seeds


Instructions:

1. Rinse/soak lentils. Cook according to package instructions.

2. Add onions, garlic, mushrooms, peppers, herbs and spices once lentils begin to soften.

3. For robust flavor, allow to sit for at least 30 mins after cooking.

4. Top with hemp seeds and pecans.
